Lexington-Style BBQ: Pork Shoulder and the Famous Red Dip

Where it comes from
Lexington, NC declared itself the 'Barbecue Capital of the World' and the locals fight Memphis for that title. Warner Stamey's pit-style hickory cooking, established in the 1920s, set the regional template. The Lexington Barbecue Festival draws 200,000 people every October.
What makes it different
- โPork SHOULDER only. Mentioning whole hog gets you a side-eye.
- โThe dip is the gateway sauce โ vinegar with just enough ketchup to turn it pink.
- โRed slaw uses the dip as its dressing. It's the bridge to Eastern's white slaw.

How to do it at home

8 lb bone-in pork shoulder, salt and pepper only
Skip the heavy rub. Salt the night before; pepper just before smoking.

Hickory at 225ยฐF for 10โ12 hours
Cook to 203ยฐF internal, probe-tender. Rest 1 hour.

Mix the dip
1 cup cider vinegar, 1/2 cup ketchup, 1/4 cup brown sugar, 1 tsp red pepper flakes, 1 tsp salt, 1 tsp black pepper. Whisk and let sit.

Make the red slaw
Shredded cabbage, 1 cup of the dip, 2 tbsp sugar. Toss and refrigerate 2 hours before serving.

Common mistakes
- Using yellow mustard slaw (South Carolina) or white mayo slaw (Eastern NC).
- Going too heavy on the ketchup โ the dip should be PINK, not red.
- Calling it 'pulled pork.' It's chopped or sliced.
