- Offset stick burner, 250โ275ยฐF, 12โ18 hours, no wrap or butcher paper wrap

- Dalmatian rub โ coarse kosher salt + coarse black pepper, 50/50. Sometimes garlic.

- Either none, or a thin warm tomato/vinegar sauce served on the side. Sauce on the meat is heresy.

- White bread, Pickles, Raw onion, Pinto beans, Potato salad
Where it comes from
Central Texas BBQ traces to Czech and German immigrant butchers in the late 1800s who smoked unsold meat in the back of their grocery stores. Customers ate it standing up on butcher paper. Lockhart, Taylor, and Luling became the holy trinity. Aaron Franklin made it a national obsession.

How to do it at home

Trim the brisket properly
Leave 1/4" fat cap. Square the edges. Remove the deckle (hard fat between point and flat).

Apply Dalmatian rub the night before
Equal parts coarse kosher salt and 16-mesh black pepper. Wrap and refrigerate overnight.

Smoke at 250ยฐF over post oak
Fat side up. Spritz with water every hour after the bark sets. Cook to internal 165ยฐF.

Wrap in unwaxed butcher paper
Pink butcher paper preserves bark while pushing through the stall. Continue to 203ยฐF internal.

Rest at least 1 hour
Hold in a dry cooler for 1โ4 hours. This is the secret most home cooks skip.

Common mistakes
- Adding sugar, paprika, or anything besides salt and pepper to the rub.
- Wrapping in foil instead of butcher paper (you'll steam the bark off).
- Cooking past 203ยฐF and drying out the flat.
- Skipping the rest. A hot brisket is a wet brisket.
