Where it comes from

Kansas City BBQ began with Henry Perry in the 1900s, who smoked meats in an alley off 19th and Highland. His protΓ©gΓ© Arthur Bryant turned it into an institution. KC is where burnt ends were invented β€” originally trimmings given away for free. Now they're $25/lb.

How to do it at home

    Smoke a whole packer brisket to 195Β°F

    Use a KC-style sweet rub. Hickory wood, 225Β°F.

    Separate the point from the flat

    Cube the point into 1.5" pieces. Reserve the flat for slicing.

    Re-rub the cubes, toss in sauce

    Apply another light coat of rub and 1/2 cup of KC-style BBQ sauce.

    Smoke another 1–2 hours at 250Β°F

    Until the cubes are caramelized, sticky, and have crispy edges.
