Where it comes from

Eastern NC BBQ is the oldest American BBQ tradition, dating to the colonial era when Spanish-introduced pigs were cooked over wood by enslaved Africans on coastal plantations. It's whole-hog, vinegar-based, and resists every modern trend. The 'BBQ Trail' through Wilson, Goldsboro, and Ayden is a pilgrimage.

How to do it at home

    Use a pork shoulder if you can't do a whole hog

    8โ€“10 lb bone-in pork shoulder. Salt and pepper rub. That's the whole rub.

    Smoke at 225ยฐF over hickory or oak

    10โ€“12 hours, no wrap. Cook to 203ยฐF internal and probe-tender.

    Make the vinegar sauce while it cooks

    2 cups apple cider vinegar, 1 cup water, 2 tbsp crushed red pepper, 1 tbsp black pepper, 1 tbsp salt, 2 tbsp sugar (some recipes omit). Steep 1 hour.

    Chop, then dress

    Chop the shoulder coarsely with a cleaver. Pour vinegar sauce over and toss. Serve immediately on a soft bun with slaw.
