Where it comes from
South Carolina is the only US state with a distinct mustard-based BBQ tradition. It traces to German immigrants in the 1700s who brought mustard sauces with them to the Midlands (around Columbia and Charleston). It coexists with vinegar BBQ in the east and tomato-based BBQ in the upstate.
What makes it different
- →Mustard-based sauce. Nothing else like it in American BBQ.
- →'Hash and rice' — chopped pork stewed with onions and seasonings, served over rice. A South Carolina-only side.
- →Whole hog tradition similar to Eastern NC but with different sauce.
- →Carolina Gold sauce works shockingly well on chicken too.

- Mistaking SC mustard sauce for honey mustard. They're not related.
