Where it comes from

South Carolina is the only US state with a distinct mustard-based BBQ tradition. It traces to German immigrants in the 1700s who brought mustard sauces with them to the Midlands (around Columbia and Charleston). It coexists with vinegar BBQ in the east and tomato-based BBQ in the upstate.

What makes it different

  • Mustard-based sauce. Nothing else like it in American BBQ.
  • 'Hash and rice' — chopped pork stewed with onions and seasonings, served over rice. A South Carolina-only side.
  • Whole hog tradition similar to Eastern NC but with different sauce.
  • Carolina Gold sauce works shockingly well on chicken too.

How to do it at home

  1. 1

    Smoke a pork shoulder to 203°F

    Standard low-and-slow — 225°F over hickory for 10–12 hours.

    Make Carolina Gold sauce

    1 cup yellow mustard, 1/2 cup cider vinegar, 1/3 cup brown sugar, 2 tbsp honey, 1 tbsp Worcestershire, 1 tsp black pepper, 1 tsp hot sauce. Simmer 10 min.

    Pull the pork, dress lightly

    Toss with 1/2 cup of sauce. Reserve the rest for the table.

Common mistakes

  • Using French's-style mustard straight from the bottle. You have to cook it down with vinegar and sugar.
  • Mistaking SC mustard sauce for honey mustard. They're not related.
