Burnt ends originated in Kansas City as a snack made from the trimmings of brisket. Today they're a delicacy: the brisket point is separated, cubed, tossed in BBQ sauce and rub, then smoked again until the exterior turns deeply caramelized and almost candy-like. They're the best part of the whole brisket — fight me.
