Where it comes from

Owensboro, KY is the mutton capital of America. The tradition comes from Welsh and Catholic immigrants in the 1800s. Sheep were plentiful and Catholics needed a non-pork option for church festivals. The International Bar-B-Q Festival in Owensboro draws 80,000 people every May.

How to do it at home

    Source a leg of mutton or lamb shoulder

    True mutton is hard to find โ€” substitute lamb shoulder if needed (cook time shortens).

    Smoke at 225ยฐF over hickory

    12โ€“18 hours for mutton, 6โ€“8 for lamb. Cook to 203ยฐF internal.

    Make the black dip

    1 cup Worcestershire, 1 cup cider vinegar, 1/2 cup water, 1/4 cup brown sugar, 1 tbsp lemon juice, 1 tsp allspice, 2 tsp black pepper, 1 tsp salt. Simmer 15 min.

    Pull, chop, and serve with dip on the side

    Use the dip as a finishing sauce โ€” drizzle on the meat or use as a dipping sauce for chunks.
