Homemade naan on the grill is one of those things that sounds intimidating until you try it once. The dough is simple, the grill does all the work, and the result is soft, pillowy flatbread with charred blisters that no oven can replicate. Combine flour, yeast, sugar, and salt in a bowl. Add warm water, yogurt, and 1 tablespoon of olive oil. Mix until a shaggy dough forms, then knead on a floured surface for 5 minutes until smooth. It should be soft and slightly sticky — don't over-flour.
Cover the dough with a damp towel and let it rest for 10 minutes. This relaxes the gluten and makes the naan stretchy. You don't need a full rise — naan is better with a tighter crumb.
Divide the dough into 6 equal pieces. Roll each into a rough oval about ¼ inch thick. Don't worry about perfect shapes — irregular is authentic. Brush one side lightly with the remaining olive oil.
Place the oiled side down on a clean, medium-hot grill. Close the lid for 1 minute to create steam, then open and cook another minute. Flip when you see bubbles and char marks. Cook 1–2 more minutes. The naan should be puffed and spotted with char.
Mix melted butter with minced garlic. Brush over the hot naan immediately off the grill. Sprinkle with fresh cilantro. Stack on a plate and cover with a towel to keep warm. Serve within 10 minutes for maximum softness.
