316 vs 304 vs 430: What the Numbers Actually Mean

Every grill sold as "stainless" is one of three alloys, and the difference decides how long yours lasts in salt air.

430 is ferritic stainless with no nickel. It is magnetic, cheap, and rusts readily in a coastal environment. Most budget grill bodies are 430.

304 is the standard 18/8 stainless used in kitchens. It resists ordinary corrosion well and resists chlorides poorly. In salt spray, 304 develops rust freckles within a season and pitting within two or three.

316 adds roughly 2–3% molybdenum, which is specifically what resists chloride pitting. This is the alloy specified for marine hardware, and it is why marine grills cost more.

Pro Tip: A magnet is a rough field test: 430 is strongly magnetic, 304 and 316 are mostly non-magnetic. It will not distinguish 304 from 316, but it will catch the cheap stuff.

The Post-Cook Routine That Actually Matters

Corrosion on a boat is caused by salt sitting on metal, not by the metal being wet. Fresh water is your entire defense.

After every cook, once the grill is cool: rinse the exterior with fresh water, wipe it dry with a towel, and cover it. That is the whole routine, and it takes ninety seconds.

Drying matters as much as rinsing. A rinsed grill left to air-dry in salt air just picks the salt back up. Wipe it.

Once a month at sea, or after any heavy spray, pull the burner and rinse the venturi and the igniter area. Salt buildup in a burner port is the most common cause of uneven flame on a marine grill.

Removing Rust Freckles Before They Become Pitting

Surface rust on stainless usually is not the stainless corroding — it is iron contamination sitting on top of it, from steel wool, a carbon steel brush, or rust bleeding down from a nearby fastener. Caught early, it wipes off.

Use a stainless-safe acid cleaner (oxalic-acid based products marketed for marine stainless, or Bar Keepers Friend) with a soft cloth or a nylon pad. Rinse thoroughly afterwards.

Never use steel wool or a carbon steel wire brush on stainless. They embed iron particles that rust immediately and permanently. Use nylon, brass, or stainless-only pads.

Follow with a passivating polish or a wax designed for marine stainless. It puts a barrier between the chromium oxide layer and the salt.

If you already have pitting — small dark craters rather than orange film — the alloy has been attacked and it will not polish out. Slow it down with regular cleaning and protection, but plan for replacement of that component.

Burners, Igniters and Regulators

The grill body is the part everyone worries about. The parts that actually fail first are the burner, the piezo igniter and the regulator.

Burner: inspect for blocked ports every few months. A stiff nylon brush and a paperclip clear them. Replace when you see flame lifting off the ports or a distinct yellow burn.

Igniter: the most common failure on any marine grill. Keep the electrode dry and clean; a spray of dielectric grease on the connection helps enormously. Carry a long butane lighter as backup regardless — every marine grill igniter dies eventually.

Regulator and hose: inspect the hose for cracks each season. Replace it every five years whether it looks bad or not. A cracked propane hose on a boat is not a maintenance item, it is a hazard.

Winterizing and Off-Season Storage

Deep clean first. Grease left over winter turns rancid and acidic and eats at the finish.

Rinse, dry completely, and polish the stainless with a marine polish or wax.

Remove the propane canister and store it outside, upright, in a vented space. Never store a canister with the grill in a locker.

Store the grill dry and indoors if possible. A padded case beats a locker; a locker beats leaving it mounted on deck.

If it stays on the boat: cover it, and check it mid-season. A covered grill on a shrink-wrapped boat still gets condensation.
