Rub

A blend of dry spices applied to the surface of meat before cooking to season and form the bark.

Dry rubs are the foundation of American BBQ. A classic rub starts with salt, sugar (often brown), paprika, black pepper, garlic powder, and onion powder. Regional variations layer in chili powder (Texas), mustard powder (Carolinas), or coffee. Apply liberally to the surface and let the meat rest 30+ minutes before cooking so the salt can penetrate.
