Equipment
Pellet Grill
A wood-pellet-fueled grill with a thermostat that auto-feeds pellets to maintain temperature like an oven.
Pellet grills (Traeger, Pit Boss, Camp Chef Woodwind) burn small compressed wood pellets fed by an auger. A controller maintains your set temperature automatically — you can set it and walk away. They produce real wood smoke, but typically less intense than offset stick burners. Best for set-and-forget low-and-slow cooks. Most struggle to hit true searing temps.
