Flare-Up

A sudden burst of flame caused by fat or marinade dripping onto the burners or coals.

Flare-ups happen when fat drips onto an active heat source and ignites. A small flare can put a nice sear on food; a sustained flare will char it black. Prevent flare-ups by trimming excess fat, keeping a two-zone setup so you can move food off the flame, and cleaning your grates and drip tray. NEVER use water to put one out — move the food and close the lid to smother it.
