The Full Review

The Yoder YS640S is the first pellet grill I've used that a stick-burner purist would respect. At 315 lbs of 10-gauge American steel, it has more thermal mass than most offset smokers.

That mass translates to performance. Temperature swings are minimal even in a Minnesota January. I ran a 16-hour brisket cook in -10°F ambient temps and the YS640S never deviated more than ±8°F from set point. Pellet consumption was higher in extreme cold, but the results were flawless.

The cooking area is enormous — 1,070 total square inches across two tiers. I've fit 6 full packer briskets simultaneously for competition prep. The heat distribution is remarkably even thanks to the diffuser plate and thick steel walls.

The optional ACS controller adds WiFi capability, but the standard controller is solid. I prefer the simplicity of the standard version — it holds temp accurately and doesn't require an app.

This grill will outlast you. The 10-gauge steel doesn't warp, doesn't rust easily, and takes decades of heavy use without complaint.

More about pellet grills

Are pellet grills worth it?
If you want set-and-forget smoking with WiFi monitoring, yes — pellet grills are transformative. Set the temperature, walk away, and come back to perfect ribs 6 hours later. The trade-off is searing: pellet grills max out around 500°F, so you won't get steakhouse crusts without a sear box.
How long do a bag of pellets last?
A 20 lb bag of pellets runs about 6-8 hours at 225°F (low and slow), or 1-2 hours at 450°F. Plan on roughly 1 lb per hour at smoking temps and 2-3 lbs per hour at high heat.
Do pellet grills give real smoke flavor?
Yes, but lighter than a stick burner or charcoal smoker. Pellet smoke is clean and consistent — great for beginners — but purists find it subtle. Use 'super smoke' modes if available, run cooks below 225°F where the auger fires more, or add a smoke tube for stronger flavor.
Can pellet grills sear steaks?
Most can hit 450-500°F, which is enough for decent grill marks but not steakhouse-level crust. Premium models with direct-flame access (Camp Chef Slide-and-Grill, Traeger Timberline) sear better. For serious searing, finish steaks on a side burner or cast iron skillet.
