The material choice is the whole review. Vinyl covers look more waterproof and are actively worse on a boat: they trap condensation against the stainless and hold a warm, wet, salty microclimate against the burner. Acrylic canvas breathes, which lets moisture out while blocking spray and sun.
The fit matters for a reason that has nothing to do with looks. A loose cover flogs at anchor in a breeze, works itself off, and ends up in the water. The drawcord plus buckle on the fitted version stays put in serious wind.
