Spare ribs trimmed into a uniform rectangle with the rib tips and brisket flap removed. Cleaner presentation, more even cook.
A St. Louis cut is just spare ribs cleaned up — the cartilaginous rib tips at the bottom and the floppy brisket bone at the top are trimmed off, leaving a tidy rectangular rack. They cook more evenly than untrimmed spares and look better on a plate. Save the trimmings — rib tips are delicious smoked separately.
