Instant-read vs. leave-in: they serve different purposes. An instant-read (Thermapen) gives you a spot check in 1 second. A leave-in (Signals, MEATER) monitors continuously over hours. Serious cooks need both.
WiFi beats Bluetooth for range. Bluetooth tops out at 165 feet and struggles through walls. WiFi works from anywhere — the grocery store, bed at 3 AM, across town. For long smokes, WiFi is essential.
Accuracy matters more than features. A ±1°F thermometer at $100 beats a ±5°F thermometer with a fancy app at $150. Check accuracy specs before anything else.
